You probably have an older model washing with the visible heating element at the bottom. Foods probably there and they fall on it and burn. Remove them.
5. What can I do to get rid of stubborn fat in the dishwashing machine?
The temperature in the machine may be below the temperature required to dissolve the fat. See the instructions. If your machine does not have its own thermostat (most of them now has), increase the temperature of the water in the boiler to 41° F ( 5° C ).

You have very hard water, use more rinse aid.
7. How to prevent door from leaking?
First, make sure that maybe a piece of the dish is not ‘stuck’, and therefore you can not close the doors. If everything is OK, they maybe don’t fit as they should. If you see that the doors do not stand in line, take the tool and fasten or loosen the bolts to the door snap into the place.
